fancy name. no fret. it's just mousse - cake - mousse - cake --- in several layers. something like what you will buy in bakery shops now. truffle cakes.. mousse cakes.. tiny little buffet dessert. i've been wanting to dare myself to this recipe from my 3 inches thick Golden Book of Chocolate. finally got the guts to test it today.
got plenty of 70% cocoa dark chocolate. being in a house of women, and having to satisfy their captious tastebuds, it's better that I stay on the "dark" side with LEAST sweetenings.
mousse readied, sponge cake readied. time to do the scariest part I dread whenever I read this recipe -- putting them into layers after layers. I hate it cuz the sponge is so soft and delicate, im afraid i would break it. My spreading skill is beyond hope, im afraid the layering would be slanted like the Tower of Pisa. Desperate, I flattened the sponge against the mousse as much as possible and hope for a prettier "side view" for my Chocolate Marquise.
thankfully, the result came out sweet and pretty.I didn't have the chance to decorate it nicely or rather, appropriately, for this fancifully named mousse cake. My nieces were here, chanting for sliceS of it and nagging me to be quick with my knife. Rachel baby was actually digging her fingers into the edges while waiting for me to ready the cake. In fact, the tiny hearts were a mistake INSISTED by the girls. along with several finger prints.
Even before I can give some final touches to the Marquise, Rachel and Wendy gobbled up 1/3 of the cake.
I wish I had the chance to take a photo of Rachel with her whole face chocolated!!
