Derrick & I did jet ski that evening too. a very good experience! the timing was perfect as we managed to catch the most beautiful sunset in the middle of the sea.. while ski-ing and hugging tight onto him =) for fear that he will fling me out of my seat! very exciting! very expensive and rather romantic.

Chocolate Chip muffins


250g plain flour

2 teaspoons baking powder

Half-teaspoon bicarbonate soda

2 tablespoons best quality cocoa

175g caster sugar

150g chocolate chips (plus more for sprinkling later)

250ml milk

90ml vegetable oil

1 large egg

1 teaspoon real vanilla extract


Preheat the oven to 200C and fill a 12-bun muffin tray with paper cases. Weigh out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix both together – it will be a runny batter - then spoon into waiting muffin cases. Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy.

Chocolate Cheesecake! - recipe  

as there're people requesting for the recipe of this Chocolate Cheesecake

so.. here goes~!

FOR THE BASE :

2 packets of Oreo cookies - crushed to bits

60g butter - melted

FOR THE CHEESECAKE FILLING :

175g dark chocolate - melted

2 packets of Philadelphia cream cheese - in room temperature

150g caster sugar

1 tablespoon custard power

3 large eggs - room temperature

3 large egg yolks

150ml sour cream

1/2 teaspoon cocoa, dissolved in 1 table spoon hot water

To make the oreo base, mix the melted butter with crushed oreo. Press the crumbs into the bottom of a springform tin (which should be lined with clingfilm or aluminium foil) and put into the freezer while you make the filling.

Preheat oven to 180'C. Boil a kettle of water. Melt the chocolate and set aside to cool.

Beat the cream cheese, then add the sugar and custard powder, beating again to combine. Beat in 3 eggs, 3 yolks, and sour cream. Add the cocoa, which is dissolved in hot water, and the melted chocolate, and mix to a smooth batter. Sit the springfoil tin in a roasting pan and pour in the cheesecake filling (that's if your oven is big enough. If not, just pour the boiling water onto the baking sheet.) Fill the roasting pan with just-boiled water to halfway up the cake tin. Bake for 45min to 1hr. The top of the cheesecake should be set, but the underneath still wobbly.

When it's done, peel away the foil and let the cheesecake cool. Put in the fridge overnight once it's no longer hot. Serve chilled.

Baby Guinea Pigs!!

oh man. it was a frantic morning. battling for time -not becuz of make up and clothes- but becuz of this!!
TWO LITTERS!! MY FEMALE GUINEA PIG GAVE BIRTH TO TWO LITTERS WHEN WE WERE ALL SLEEPING!! my family were all shocked! at first my sis woke up and walk to the toilet, as usual, she'll glance at the pigs whenever she walks pass and she saw one black tiny thing crawling around... then she went closer to see... It's a miniature of the male guinea pig!! sooooooooo cute!!! then the panick started when she woke the whole family up and we were all lost as to how to handle them. hahaha.. it was a mad rush this morn~
then I peep into the blue hut -- oh my goodness!! one more brown litter!! identical to the mother!! so there're two.. one all brown with a center parting like the mother, the other is black and brown, like the father.. haha so cute! thank goodness there are only 2 litters.. I can't imagine having more.. it's already a little over-crowded in there.. haha!

arhhH!!! they are really the cutest thing I've ever have!! even cuter than hamsters!! and fishes too. yuck. the amazing thing about guinea pig is that the moment the litter is born, it is fully furred with big eyes and teeth. amazing isn't it? and a moment later you'll see them running around. I was shocked to see the Baby Black chasing the Baby Brown.. a good sign.. means they are all healthy and well =) yeah! I've succeeded in rearing them! thank God there's no deformity or difficult labour. the litters are all perfect!
weaning - have to wean for 3 to 4 weeks. so sweet ~ luckily the mother didn't reject her babies. that happened in some cases and the babies will starve to death..
amazingly, the Baby Black starts eating apple when it is less than 12 hrs old!!! and it loves apple!! it doesn't choose the carrots -not that it's too hard or he has no teeth, he has teeth!- so cute!!


all four guinea pigs now. haha. two brown. two black. funnily, the Browns stay together. the Blacks stays together. thats so colour. Colour rangers! haha.. wherever the papa Black goes, the Baby Black will follow.. even when the papa goes to eat. mayb thats why the Baby Black keep eating apple. one prefers apple, the other milk. I suspect Baby Brown is a female too. and Baby Black is male.

so small and light! very soft fur!

eating again. haha. well.. it's a good sign =)

Oreo Cheesecake

with 2 packets of oreo!! thats alot you noe!
a really huge quantity for cheesecake. 3 packets of cream cheese. 1 cup of sour cream. 4 eggs. and not forgetting a cup of sugar. haha! and xienlin said it was rich, of cuz! fattening too! luckily the cook doesn't eat her food.. most home-maker would agree to that =)
a little over baked, thus the brownish colour
but it's still moist and rich! perfect when it's chilled!
